- Cut kumquats in half and slice lime into small wedges. Set aside.
- Grate end of lime and set aside zest.
- Assemble kebabs by alternating kumquats, lime wedges and sliced duck.
- Season with salt and pepper and cook on the grill for 10 minutes.
For balsamic and honey sauce
- Squeeze oranges.
- In a saucepan, cook squeezed orange juice, balsamic vinegar, honey and soy sauce over low heat. Stir.
- Reduce by one third then serve hot.
