
Slightly-cooked duck foie gras with bluefin tuna tartare

Ingredients
- 1 slice whole, slightly-cooked duck foie gras (40 g)
- 30 g bluefin tuna
- 10 g diced fresh tomato
- 10 g diced lime
- 5 g chopped shallots
- 5 g chopped chives
- 1 tsp balsamic vinegar
- Espelette pepper, salt and black pepper
Preparation
- Dice the tuna.
- Mix with the tomato, lime, shallots, chives, vinegar, Espelette pepper, salt and black pepper.
- Place the tartare on the slice of whole, slightly-cooked duck foie gras.
- Serve.
