Slightly-cooked duck foie gras with bluefin tuna tartare

Ingredients

  • 1 slice whole, slightly-cooked duck foie gras (40 g)
  • 30 g bluefin tuna
  • 10 g diced fresh tomato
  • 10 g diced lime
  • 5 g chopped shallots
  • 5 g chopped chives
  • 1 tsp balsamic vinegar
  • Espelette pepper, salt and black pepper

Preparation

  1. Dice the tuna.
  2. Mix with the tomato, lime, shallots, chives, vinegar, Espelette pepper, salt and black pepper.
  3. Place the tartare on the slice of whole, slightly-cooked duck foie gras.
  4. Serve.
