Duck breasts with green pepper sauce

Ingredients

  • 4 Duck breasts.
  • 4 slices of lard.
  • 2 tbl. Butter
  • 4 tbl. Whisky.
  • 1 pot of fresh cream.
  • Soya sauce
  • Whole green peppers
  • Salt & pepper.
  • Paprika.
  •  

1- Season the breasts with salt, pepper and paprika.

2- Cut the lard into strips.

3- Melt the butter in a pan and brown the breasts on both sides.

4- Cook breasts on both sides

5- Add the strips of lard and cook for a further minute or so on both sides.

6- Slowly add the whisky.

7- Add to the cooking sauce the cream and ground green peppers.

8- Bring to the boil and reduce the sauce.

9- Add a little soya sauce to taste.
